Spicy Peach Salsa
- 2 Large Peaches, with skin, pitted and diced
- 1 Lg. Tomato, seeded and diced
- 1/4 cup Finely diced Onion
- 2 Tbsp. Fresh squeezed lime juice
- 2 Tbsp. chopped fresh cilantro
- 1 Tbsp. minced jalapeno, with seeds
Combine all ingredients in a bowl. Season with salt to taste, and serve with
tortilla chips or Grilled Chicken. Salsa can be made several hours in advance
and stored in the refrigerator. Makes 4 servings.
